Here is the easy way to cook the spanish rice. To get better result, I suggest you to use the big grain (not the long grain or basmati). I cooked this rice using the pressure cooker without closing the lid tightly (slightly open). Once it was 3/4 done, I removed it from fire and closed the lid tightly. When I opened the lid after 10 minutes the rice was well done. (It was not sticky and got a perfect rice). Hope you too!!

Ingredients
Rice – 1 cup (Use the big grain, basmati is not fit for spanish rice)
Onion – 1/2 chopped
Green Bell Pepper – 1/2 or 3/4 chopped
Tomato – 1 chopped
Tomato Paste – 1 can (8 oz)
Warm Water – 1 1/2cups
Chili Powder – 1tsb
Cumin Powder – 1/4 tsb
Black Pepper powder – 1/4 tsb
Method
Chop bell pepper and onion. Heat oil in a pan, add the rice and saute until the rice slightly turn tan. Now add the chopped bell pepper and the onions and stir until the onions are done. Then add the chopped tomato and the tomato paste(sauce) and chilly powder, salt, cumin powder, pepper powder and water. Cook it on low flame until it is done. (Don’t overcook the rice, it shdn’t stick with one another)
