Eggplant Masala / Kathirikai Masala

This Masala is a good combo with Biryani. Whenever I prepare vegetable biryani , I also prepare this masala. This masala is really great if it prepared by white eggplants. I didnt get any white brinjals here , so I go with the normal eggplant.Try it.

Ingredients
Tender Indian Eggplant – 6 small
Onion – 1 chopped
Tomato – 2 small
Red chilly powder – 1tsb
Tamarind paste – 1/4 tsb
Garlic – 3pods
Cilantro chopped

Method.
1. Heat some oil in a pan and pop mustard and add the chopped onions ,garlic fry until it is done. Now the chopped tomato and fry until it get mashed well and then the red chilly powder. Fry until oil seperates from the masala.
2. Cut the Eggplant lengthwise into 4 or 6 pieces (or else you can make slits over the eggplant and add it to the masala). Add this to the masala and allow it to cook well. (Don’t add water. )
3. When it is half done add the tamarind juice and enough salt and cook until the eggplants are soft and finally garnish with cilantro and enjoy this great masala with Vegetable biryani.
