Ladoo / Boondi ladoo

A sweet stall near to my home back in India makes orange ladoo and I love it. So I also tried the same color, there is no big difference between yellow and orange ladoo. (Only the color differs) . I never made ladoo before, but this is my first attempt. I didn’t have the proper ladle to make the boondi, so my boondi’s(balls) were so small . Making ladoo is not so hard as I thought before.

Ingredients
Gram flour – 1 1/2 cup
Sugar – 1 cup
Water – 1 cup
Cardamom – 2 pieces (powdered)
Raisins and cashews – 1/4 cup
ghee – 1 tsp
Ladle with big holes (click the link to see the ladle)

Method
1. Dissolve sugar in 1 cup of water and prepare syrup to one string consistency. Now add the cardamom powder and the food color (either yellow or orange). 
2. Add enough water to the gram flour and make it like dosai(little watery, not so thick) batter.
3. Heat oil in a pan on medium heat, pour the batter over the ladle. So it will fall like tiny balls (boondi) into the oil. Don’t over cook it. It shouldn’t be crispy. Drain it from oil and immediately put it into the sugar syrup. Leave it in the sugar syrup for few minutes and drain it. Repeat the same process for the whole batter.
4. Now heat little ghee in a pan and fry the raisins and cashews and add it to the boondi.
5. Let it cool for few minutes. Make balls immediately when it is warm. otherwise it is hard to make balls. Delicious ladoo is ready!!

    Boondi ka Ladoo…my Favourite…Oh! I wanna have one now :) Really love your creation. My Grand mom used to bring this ladoo from Mandir as ‘Prasaad’ and we all used to share it. Oh! those were the days..

    i tried making boondi laddoo, but i could’nt make balls out of it, it was very difficult and i tried keeping in hand for some time and made round, my hands are paining, but the ladoo was not soft like yours, it was hard.i tried making boondi from fried as i don;t have boondi ladder,pls advice what could be wrong?

    Hi Jyothi,
    dont fry the boondi until crisp. It must be soft. Once you drain it from oil, immediately put it in the warm syrup.
    Leave it for few mins so it will absorb the syrup and become more soft. Mash the boondi’s slightly before making balls.
    So the boondi’s will bind together. Hope this will help.

    I used the slotted spoon which we use to drain snacks from oil. (the holes are very small, and my boondi’s also very tiny)
