Drumstick Sambhar/ sambar
Ingredients
Toor dal – 1 cup
drumstick – 2
Shallot Onions – 10
Tomato – 2
Red chilly powder – 1 tsp
Turmeric powder – 1/2 tsp
Asafoetida – a pinch
Garlic – 5 pods
Mustard for seasoning
Corriander leaves – 1 handful
Tamarind paste – 1/2 tsp
Jaggery a little piece
Ghee/Oil
To grindĀ
Channa dal – 2 tsp
Fenu greek seeds – 1 tsp
Dry red chilly – 3 or 4
Curry leaves – few
Corriander seeds – 2 tsp
Dry roast all the ingredients and grind them into a smooth paste.
Method
1. Add little ghee/oil in pan and fry the toor dal for a while and pressure cook the toor dal with enough water.
2. In a pan heat some ghee/oil pop mustards, few curry leaves and asafoetida and then add the shallot onions.(if the onions areĀ big cut it two or three pieces) and the garlic and fry until it becomes soft.
3. Now add the chopped tomato and fry until the oil seperates from the masala. Add the red chilly powder and the turmeric powder and 1tsp of of the ground powder and fry until the raw smell goes out.
4. Add the drumstick pieces and fry for 2 more mins and add enough water and allow the drumstick to cook.
5. Once the drumstick is done add the cooked toor dal and the tamarind juice.
6. Add the jaggery ,salt and the remaining ground powder and the chopped corriander leaves and serve with Idlies or rice.
7. It is good combo for idly and also rice. Hope you all enjoy this sambhar. Let me know your results.

Maida another name: all purpose flour.
