Bittergourd (Karela) chips

Bitter gourd deep fry:

The bitter gourd chips goes very well with sambhar rice and any kind of rice. I had a chance to taste this chips back in india and was trying to get the recipe for this. I got this from arusuvai.com. It came out well. When I came from India I bought some and brought it here, and it lasted for 3 three months. So it can last long for few months . And also I didn’t get any Indian bitter gourd so I tried this with the chinese bitter gourd. No big difference between them. Once you make this chips and put it in a air tight jar and you can have it whenever you want. Bitter gourd is good for diabetes (I heard so) so everybody buying this chips because it doesn’t taste more bitter and good to eat. So there is a great demand for this chips and merchants selling this for Rs 85 per kg in India.

Ingredients:
Bitter gourd – 1/2 lb
Ginger/garlic paste - 1/4 tbsp
Red chilly powder – 1 tbsp
Corriander powder – 1/2 tbsp
Garam masala – 1/4 pinch
Amchur(dry mango) powder – 1/4 tbsp
Fennel powder – 1/4 tbsp
Channa flour – 6 tbsp
Rice flour – 2tbsp
Corn flour – 2tbsp
Lemon juice – 1tbsp
Curry leaves chopped – 2tbsp
Salt to taste
Oil for deep frying

Method:
1. Wash and slice the bitter gourd along with this seeds if the seeds are tender.If not remove the seeds and sliced it.
2. Add salt and little water and cook it. (I microwave it for 3 mins)
3. Now the drain the excess water and add all the ingredients to this cooked bittergourd and add some more salt. Mix everything together. Bittergourd Should be coated well with the ingredients.
4. Keep this aside for 5 minutes.
5. Heat little oil in a pan , and drop the pieces seperately. Fry it in medium flame until they become crispy. It will take little more time than other fries. So be patient and enjoy it with rice.
