Adai

Adai is one of Mom’s favorite.  Try this it is very delicious and also very good for health.

Ingredients
Channa dal/kadalai paruppu – 1 cup
Moong dal/pasi paruppu – 1/2 cup
Toor dal/Thuvaram paruppu – 1/2 cup
Urad dal/Uluntham paruppu – 1/4 cup
Idly rice – 1 cup
Green chillies – 1 (according to your taste)
Ginger – 1/2 inch
Curry leaves – few
Onion (optional) – 1/2 chopped

Method
1.Soak all the dals and rice together with enough water for 3- 4 hours.

2. Wash and drain the dals and grind them into a coarse paste. (don’t add more water while grinding , the batter should be thick than dosai batter)You can add green chillies and ginger while grinding. Or else you can chop this two and add to the batter after grinding.

3.  Now add some curry leaves, salt and mix the batter well. (No need to ferment the batter. You can make adai immediately. If there is any excess batter can be re-use by keeping in the fridge)
4. Now heat the dosai tawa or the electric griddle and pour a laddle of batter and spread it into a thick layer. (It should not be thin like dosai but little thicker than that).
5.Now apply oil on the edges and a little over the adai. Cook it until it become nice brown color. Then flip the adai and cook it the other side too.
6.Adai is so good to eat it hot right from the pan. Adai doesn’t need any side dish.
but if you want you can have coconut chutney or Avial (mixed vegetable cooked with coconut).

    Hi,

    Great blog, stumbled upon it while browsing through Saffron Trail’s blog. I love adai :) and usually grind some curry leaves and 1-2 red chillies with the dal instead of adding chopped green chillies later, tastes yummy.

    Keep up the good work… The badhushas look like they come from a sweet stall :)
