Kathirikkai verkadalai curry
Here is an easy, but tasty eggplant curry with peanuts. Really it is very yummy dish. I hope you also love it. Try it and let me know your results.
Ingredients
Tender Eggplant – 4
To Grind
Ground nuts /Peanuts – 10
White sesame seeds – 1tbsp
Onion – 1 medium size
Tomato – 1medium size
Red chilly powder -1tbsp
Corriander powder – 1tbsp
Turmeric -1 tbsp
Coconut – 2 tbsp
Tamarind paste – 1/2 tbsp
Cilantro to garnish
Salt to taste
Oil
Method
1.Wash and slit the eggplant (don’t cut it into pieces) .
2.Heat 2 tbsp oil in pan and add the eggplant and cover with a lid and cook for 2 minutes. Then open the lid and cook for another 2 minutes. Drain it from oil and keep it aside.
3. In the remaining oil add the chopped onion and tomato and once the tomato is done add the chilly, corriander and turmeric powder. Cook it for a minute then add the roasted ground nuts and the sesame seeds and the coconut.
4.Cook everything for one more minutes and add the tamarind paste with this mixture and grind everything together into a smooth paste.
5.Now heat 2tbsp of oil and add the ground masala and add a 1/4 cup of water and allow it to boil.
6. After 3 minutes add the cooked eggplant (fried) into the masala add salt and cilantro and cook until the oil seperates from the curry.
7. Now the yummy eggplant curry is ready to serve.
