Crispy Bittergourd

This bittergourd fry is very simple and easy to make. It goes very well with Sambhar rice and also curd rice. Give a try let me know your results. Happy cooking:)

Ingredients
Bittergourd – 1
Chilly powder – 11/2 tbsp
Turmeric powder -1 tbsp
Tamarind paste – 1/4 tbsp
Salt to taste.

To garnish
Sliced onion and Sliced Tomato

Method
Wash and cut the bittergourd into very thin pieces.

Add chilly powder, turmeric powder and tamarind paste (I have only tamarind paste) and salt. Mix everything together. Dont add any water. Keep this in refrigerator for one hour.

Heat oil in pan. The oil temperature must be high, else it will take a long time to cook.Now drop the bittergourd pieces into the oil. Fry it until it becomes crispy. Nice brown in color. Drain it from oil and place it in a tissue paper to drain extra oil. Now add the sliced onion and sliced tomato and enjoy it with rice.

Note: Add onions and tomoto only before u serve. Otherwise it will loose it crispyness.
Onion and tomato are optional.
